Ingredients

.5 c gluten free bread crumbs
.5 c canned spinach
.25c marinated sun dried tomatoes, chopped
2 cloves minced garlic
2 eggs lightly beaten
2 TBS skim milk
.5 c feta cheese crumbled
1.5 tsp Celtic sea salt
1.25 tsp black pepper
6 oz no salt added tomato sauce
Directions
1. preheat oven to 375
2. grease muffin pan
3. in a large bowl combine bread crumbs, spinach, tomatoes, galic, eggs, milk, cheese, salt and pepper.
4. add the ground turkey and work mixture until blended but do not over mix.
5. Divide meatloaf mixture into muffin cups and place muffin tins on another rack to catch juices.
6. Bake for 30-35 minutes or until temp reaches 180, let rest for 5 minutes out of the oven.
