Some Soba noodles are gluten-free (check package). They are made from buckwheat and metabolize much more slowly than most carbohydrates, which makes them ideal for diabetics and health-conscious individuals. You can pick them up at your local japanese market or health food store.
If you don't have any chicken leftovers on hand, Marinate chicken breast tenderloins or sliced breasts in some sesame oil, chopped up garlic, sake or rice vinegar, sugar, salt and pepper for 4-24 hours. Cook in nonstick skillet.. adding a bit of soy sauce and sake/wine halfway through the cooking.
This sauce can be used on any noodles with just about any vegetables you like. Enjoy :)

DELICIOUS, easy, and now only 214 calories per serving!! This is my modification of a Chicken Tikka Masala recipe on this site. It sounded great, but I wanted to use less oil, didn't want to buy garam masala (when I had the ingredients for it on hand already), added a missing ingredient into the calorie count, and reduced the serving size. Still very yummy!

Make your own sausage for a healthier alternative to prepared, store bought sausage! I cut out most of the salt called for in this recipe for a low-sodium alternative. If you don't have an hour to let the spices meld, that's ok. Let them meld for as long as possible before cooking. They're tasty either way. Enjoy!
