Ingredients

    2 Chicken Breasts
    Frozen or fresh sliced Red Green and Yellow Peppers
    Diced Onions
    Curry Paste (I use Madras)
    Olive Oil
    Chickpeas

Directions

Cut up chicken breast in bite sized cubes. Cut up chicken breast into bite sized cubes. Heat up 1 Tbsp Olive Oil in a frying pan. Sautee diced onions and pepper strips in Olive Oil. When veggies begin to brown, add diced chicken breast. Add 2-3 tbsp of Curry Paste (to taste) and mix well, coating all chicken and vegetables. Cook for 10 min. If desired, add black beans or vegetables. Cook until chicken is tender (5-7min).
