These are endless to the possibilities ! I added lemon extract, and chia seeds ( lemon , poppy seed ) or you could add cocoa powder, banana extract and walnuts....... Ingredients

    2 C part skim Ricotta
    4 eggs
    6-8 pkgs. Splenda or Truvia
    1 tsp. vanilla

Directions

Heat oven to 400 * , Blend all ingredients well. Sparay muffin pans with Pam and divide mixture evenly between cups. Bake 20 to 30 minutes or until toothpick inserted into center comes out clean.
MAKES 12 servings

Great for breakfast, snacks. or dessert !
