Ingredients

    1 Boneless Skinless Chicken Thigh (about 3 oz)
    3 slices Jenny-O Turkey Bacon
    1/4 C. sliced Zucchini
    Paprika
    Pepper
    Garlic Powder

Directions

Season Chicken with Pepper, Paprika, and garlic. Lay zucchini slices on Chicken. Wrap Bacon around so that the ends are on the bottom. Place in 400 degree oven, cook 30 minutes or until meat thermometer reads at least 165 degrees.

    This was so delicious! I switched it up a bit - used asparagus instead of zucchini, and folded the split thigh around the veggies instead of putting them on top. Then I wrapped it shut with the turkey bacon. Simply divine. :) - 6/19/08

    This was so easy and delicious! I wrapped chicken tenders and had the vegetable on the side. My husband doesn't like zucchini so it was simple enough to make this a main dish we both love! - 12/28/11
