Ingredients

1 C skim milk
4 TB unsalted butter
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp onion powder
1 TB chopped fresh thyme (may substitute ground)
1 1/4 C all purpose flour
5 large eggs
5 oz crumbled blue cheese
Directions
Pre-heat oven to 400. Line 2 large baking sheets with parchment paper.
In a saucepan, mix milk, butter, salt, pepper, onion powder, and thyme. Bring to a boil. Remove from heat and add flour, stirring vigorously until combined. Return to heat and cook, stirring well, until a dough forms and pulls away from side of pan.
Remove pan from heat and let cool 5 minutes. Add 4 eggs, 1 egg at a time, beating well after addition of each egg. You should end up with a sticky dough (consistency of drop biscuits-add little flour if needed). Beat in cheese.
Drop dough by even teaspoonfuls onto baking sheets. Beat remaining egg with 1 TB water and brush mixture onto dough to glaze.
Bake 10 minutes, then lower temperature to 350 and bake for 20-25 minutes longer (until golden brown).
Serve hot or at room temperature.
