Ingredients

* 1 pound raw, peeled and de-veined shrimp
* 1/4 teaspoon salt
* 1/4 teaspoon pepper
* 1/2 - 3/4 pound linguine
* 2 tablespoons extra virgin olive oil
* 3 tablespoons butter, divided
* 1 shallot, sliced
* 3 cloves garlic, minced
* 1/2 cup dry white wine, such as Chardonnay
* 1/2 teaspoon red pepper flakes
* 1/3 cup parmesan or asiago cheese
* 2 tablespoons freshly chopped parsley
Directions
1. Clean and dry shrimp, and season with salt and pepper.
2. Boil water for pasta and cook according to package directions.
3. Heat a large skillet over medium-high heat, adding olive oil and 2 tablespoons butter. Add sliced shallots with a pinch of salt and sauté until soft, about 3 minutes.
4. Add in minced garlic, then immediately add in the shrimp in a single layer.
5. Cook shrimp for 60 seconds; flip and cook an additional 60 seconds. Pour in wine and simmer 2-3 minutes.
6. Turn off heat and stir in the final tablespoon of butter.
7. Add cooked and drained pasta to a large bowl and pour shrimp mixture over top. Add red pepper flakes and cheese and toss to combine. Add any additional olive oil and/or salt and pepper to taste.
8. Sprinkle with parsley and serve!
