Ingredients

    * Olive Oil, 1 tbsp (remove)
    * Butter, unsalted, 1 tbsp (remove)
    * Pepper, red or cayenne, 1 tsp (remove)
    * Garlic, 1 clove (remove)
    * Collards, 454 grams (remove)
    * Chicken Broth, 1.5 cup (8 fl oz) (remove)
    * Water, tap, 1.5 cup (8 fl oz) (remove)
    * Red Ripe Tomatoes, 2 Italian tomato (remove)
    * Onions, raw, 2 small (remove)

Directions

In a large pot over medium heat, heat oil and butter. Saute the onions until slightly softened, about 2 minutes, then add the red pepper flakes and garlic, cook another minute. Add collard greens and cook another minute. Add the vegetable stock, cover and bring to a simmer. Cook until greens are tender, about 40 minutes. Add tomatoes and season with salt and freshly ground black pepper.

    Very Good
    Used a can of Rotelle tomatoes and veggie broth. Also added a teaspoon or so of red wine vinegar. These were really good and I will make this again. - 7/5/14

    I wouldn't call this vegetarian if it uses chicken broth...But I've made it subbing veggie broth and it's just as delicious! :-) - 4/25/13
