Ingredients

    Ground Turkey (400g)
    Whole Wheat Penne (2 cups)
    Canned Diced Tomatoes (14 fl oz)
    Fresh Diced Tomatoes (1 large)
    Yellow Onion (half, chopped)
    Light Cheddar Cheese (2 cups, grated; seperated)
    Dill Pickle (1, chopped)
    Pepper, Garlic Powder, Onion soup mix to flavour

Directions

1. Boil water for penne, having the pasta cooking while you prepare the rest.
2. Fry turkey (add onion soup mix if you desire)
3. Add onions and saute
4. Add both canned and fresh tomatoes (add garlic powder and/or pepper if you desire)
5. When the pasta and turkey mix is done, mix together with half of the cheese (1 cup) in a separate dish (for presentation points, try using a cast iron skillet)
6. Spread the rest of the cheese over top and broil until the cheese is completely melted.
7. Sprinkle the pickles on top; serve.

Makes approx. 8 1-cup servings.
