Introduction
My son loves breakfast meats, so I combined elements form a few different resources and a few spice ideas of my own to make these. He loves them.I first made this variation when all I could find was ground thigh meat. It has more flavor, but a bit more fat and calories as well. Ingredients

2 lbs ground chicken thigh, skinless & boneless
3 Tbls pure maple syrup
3 Tbls onion powder
1 Tbls paprika
1 1/2 tsp garlic powder
1 tsp dry sage
1/2 tsp dry thyme
1/2 tsp ground allspice
1/2 tsp ground coriander
1/4 tsp ground celery seed
1/4 tsp cayenne pepper
*salt & pepper to taste (I use 1 Tbls salt, no additional pepper)
Directions
Combine the dry ingredients to make the seasoning blend. With a Tbls of salt, I get about 1/3 cup.
Mix ground chicken thigh, 3 Tbls maple syrup and the seasoning blend together.
Using a large "cookie" scooper, scoop the sausage onto waxed paper, about 3 inches apart. Cover with another sheet of waxed paper and press into a 3-4" round with a flat bottomed glass.
Freeze and then pack with the wax paper to keep them apart.
When ready to cook, plan on two sausages per person. Lightly season a nonstick pan over medium-low heat. Cook about 3-4 minutes until edges look done. Flip and cook another 3-4 minutes.
Enjoy!
