Introduction

White and red beans, ground turkey, tomatoes and pasta in a savory broth, and all low-fat!
Can be made vegetarian by leaving out the turkey.

Ingredients

    1lb ground turkey
    1 small onion, diced
    1 large carrot, julienned
    3 stalks celery, chopped
    2 cloved garlic, minced
    1 15oz can red kidney beans (with liquid)
    1 15oz can great northern beans (with liquid)
    1 15oz can tomato sauce
    12oz V8 juice
    1 tbsp white vinegar
    1.5 tsp salt
    1tsp dried oregano
    1tsp dried basil
    1/2tsp black pepper
    1/2tsp dried thyme
    1/2lb (or 1/2 package) ditali pasta (little tubes)

Directions

Brown ground turkey in large pot over medium heat. Add onion, celery, garlic, and carrot and saute 5min. Add all remaining ingredients, except pasta, and simmer 1 hour. After 50min, cook pasta in seperate pot for 8-10min until pasta is al dente, or slightly tough. Drain, and add to soup. Simmer 5-10min more and serve.
