Introduction

Ingredients

    1 tsp ghee (clarified butter)
    2 large chicken breasts (or 3 small), cubed
    1 tsp ginger powder
    1 tsp garlic powder
    1 large (1/2 small) onion, diced
    1 green pepper, diced
    1 can petite diced tomatoes
    2 Tbl Patak's Red Curry Paste, Hot
    1 Tbl Patak's Red Curry Paste, Mild

Directions

Melt ghee in a large skillet. Season chicken with garlic, ginger, salt and pepper, and add to the skillet. Saute chicken until browned. Add onions and peppers and continue cooking till vegatables are soft and chicken is no longer pink. Add in diced tomatoes and curry paste. Let simmer about 15-20 minutes to let the flavors meld.
