Ingredients

1 small onion,minced
4 garlic cloves, minced
1.5 lbs large shrimp, pealed and deveined
2 Tbsp Olive Oil
28 oz. Chopped Tomatoes
2/3 cup Reduced Fat Crumbled Feta Cheese
Pepper, to taste
2 Tbsp fresh Oregano, chopped
Directions
Preheat oven to 400 degrees F. Heat Olive oil in a large oven-proof skillet over medium heat. Add minced onion and cook for 2 minutes, stirring often. Add garlic and cook an additional minute. Add tomatoes and their juice and bring to boil. Cook until tomato juices thicken, about 5 minutes. Season with pepper to taste.
Remove tomato sauce from heat and stir in shrimp. Sprinkle with reduced fat Feta cheese.
Bake until cheese melts and shrimp are cooked, about 10 minutes. Sprinkle chopped oregano and serve hot.
