Ingredients

    1 1/4 lb. tilapia filets
    2 oz Greek Isle flavored pita chips, crushed
    canola oil spray

Directions

Preheat oven to 400 degrees. Crush pita chips. Line a cookie sheet with aluminum and spray with canola oil spray to keep fish from sticking. Place 5 4 oz tilapia filets on the cookie sheet. Spray filets with canola oil spray. Press pita chip crumbs onto filets. Bake for 15 minutes, or until fish flakes easily.

I made this recipe with frozen tilapia, but it could easily be made with fresh tilapia, just reduce the cooking time.

I serve 2 filets to the adults and 1 filet for the child, so this recipe technically makes 2.5 servings.
