    28 slices of pepperoni (56 grams)
    2 slices of provolone cheese (2 oz)
    3 eggs
    hotsauce (optional)
    olives (optional)
    Jalopenos (optional)
    onions (optional)


We make this in using the GT Xpress. Blend the eggs. We use the Magic Bullet blender. Gotta love those gadgets. Place 7 slices of pepperoni on each side of the GT Xpress. Pour equal amounts of egg into each side of the GT Xpress. At this point add your hot sauce/olives/onions/jalopenos/ect. to which ever side wants it. Put the rest of the pepperoni on the top of the egg. Close lid. Don't open to check. After about 10 minutes it should be done. Put omlettes on plates put your cheese on top. You put the cheese on while its cooking in the machine but it often sticks to the top. Heat in microwave to melt cheese or just wait.
