Ingredients

    Dressing:
    5 Tablespoons lime juice (3 limes)
    1 teaspoon salt
    1 whole garlic clove, minced
    1/4 cup cilantro (optional, not included in nutritional value)
    1 tsp ground cumin
    1/3 cup olive oil
    1/2 tsp black pepper, ground

    For the Salad:
    1 1/2 cups red quinoa (I have used regular (light tan) also)
    1 Tbsp salt
    1 can (14 oz) or 2 cups, black beans
    1 1/2 cup corn kernels (fresh or frozen, about 2 ears)
    1 yellow sweet bell pepper, finely chopped
    1 red sweet bell pepper, finely chopped
    1 whole jalapeno chili, seeded and minced (optional, not included in nutritional value)
    1/4 cup finely chopped cilantro (opt - not included in nutritional value)
    1/4 cup green onions or scallions

Directions

For the dressing: Combine ingredients, whisk together and set aside.

For the salad: Cook the quinoa with your favorite method (add the 1 Tbsp salt to the water when you cook it), allow to cool. Toss together the quinoa and remaining ingredients.

Stir dressing, drizzle over salad, toss to coat.

Can be made one day ahead to allow the flavors to meld.
