    1-Box Betty Crocker Super Moist Carrot Cake Mix
    1 Can 100% Pure Pumpkin
    1/4 C Unsweetened Applesauce
    1/4 C water


Mix all ingredients. Bake in 400F for about 10 minutes for muffins. About 18 minutes for cake pan.

  • This recipe marrys two of my favorite desserts (carrot cake with pumpkin pie). Applesauce replacing the oil makes it a sure winner. By using a mini muffin pan, I have portion control. - 1/25/11
