Introduction

I love tapioca pudding and this is the closest Raw Version I have ever found or made. I love tapioca pudding and this is the closest Raw Version I have ever found or made.
Number of Servings: 1

Ingredients

    1 Tbsp chia seeds
    1 medium banana
    .5 cup of fresh diced pineapple
    .25 cup of water

Directions

In a blender ( I have even used my Magic Bullet for this) blend banana and water.

Pour blended mixture into a dessert container or bowl. Add chopped pineapple.

Stir in 1 Tbsp of chia seeds. Mix very well.

Pop into refrigerator to set up. The longer you let it set up the better it tastes. I generally let it refrigerate over night.

    I used chia meal instead of chia seeds, so I don't know if that changes the consistency, but it tasted great! - 2/2/11

    Why are the coconut chunks shown in the picture? Is it used in the recipe and not in the list of ingredients by mistake? Why is it blue? I do want to try this just to see if it comes out blue. - 2/25/13
