Introduction

I made this as a tasty, nourishing, good-for-you 'get better' meal for my mom, as I am helping her to recover from her surgery. Ingredients

    * 570 g President's Choice Air Chilled EXRA LEAN MINCED TURKEY with Seasoning
    * 4 tsp. Olive Oil
    * Fresh ground Sea Salt and Black Pepper, to taste (((NOT included in tracker nutritional information!)))
    * 315 g Onions, chopped (1 large red onion, +/-)
    * 225 g Mushrooms, chopped (1 8-oz. container, trimmed)
    * 200g Yellow Bell Peppers, chopped ( 1 large pepper, +/-)
    * 185 g Red Bell Peppers, chopped (1 average pepper, +/-)
    * 2 large Baby Zucchini, sliced
    * 600 g Red Ripe Tomatoes, chopped (5 good-sized 'Roma' tomatoes, +/-)
    * 1 whole jar (700 ml) President's Choice Blue Menu Mushroom & Garlic Low Fat Pasta Sauce
    * 2 tbsp. Italian Seasoning, or enough to suit your taste (((NOT included in tracker nutritional information!)))

Directions

1. In a non-stick skillet, cook the ground turkey until it is no longer pink. Set aside.
2. Heat the olive oil, salt and pepper (to taste) in a large pot (think dutch oven sized pot).
3. Add the onions, and allow to carmelize for a few minutes before adding the mushrooms. Sautee over medium-high heat for a few minutes.
4. Next add the bell peppers and zucchini. Sautee for a few minutes more.
5. When the vegetables are crisp-tender, lower the heat a bit and add the chopped tomatoes, Italian seasoning, the reserved cooked turkey, and the jar of pasta sauce. Stir and heat until it bubbles a bit, and then lower the heat to simmer the sauce, soften the tomatoes, and reduce the liquid a bit.
6. Makes 10 cups / servings. Enjoy over whole wheat pasta with some shredded Parmesan or Asiago (NOT included in tracker!) sprinkled on top!!! :)
