Introduction
In Greece, we have a popular dish called 'zucchini fritters', which is obviously fried. So I took the basic ingredients, and made them into a low-fat muffin. They really make a yummy side dish! Ingredients

2 lbs fresh zucchini, coarsely grated
3.5 oz. feta cheese, crumbled
2 large fresh eggs, beaten
1 cup chopped onions or spring onions
1/4 cup breadcrumbs from whole wheat bread
3 tablepoons semolina
lots of chopped fresh peppermint
salt and pepper to taste
Directions
Make sure you drain the zucchini thoroughly, pressing it on a fine mesh. And again. And again.
Then, mix all the ingredients together, in a large bowl.
If your mixture is still runny, add some more breadcrumbs to absorb the liquid.
Spoon into a 12-hole muffin tin.
Cover with aluminum foil and bake at 350 F for 30-40 minutes. Uncover for the last 5-10 minutes of baking, to get a nice golden color.
Makes 6 servings
