Ingredients

    Ingredients:
    Leeks, 1 leek washed and sliced 1/4" slices
    Garlic, 5 clove chopped
    Mushrooms, fresh, 1 cup, pieces or slices
    Olive Oil, 2 tbsp
    Potato, raw, 2 medium (2-1/4" to 3-1/4" dia.) diced
    Green Beans (snap), 3 cup
    Salt, 1 tsp or to taste

Directions

Wash and slice leeks discarding dark green leaves.
chop all other ingredients.
Put in casserole dish and toss with olive oil.
Roast in 375 oven for one hour, stirring every 20 minutes or so. Salt if desired, serve. Makes 4 - 6 servings.
