Ingredients

3c onion
2 cans baby corn (drained)
2c bamboo shutes
3c fesh snow peas
2 1/2 pounds of boneless skinless chicken breast cut into bite size pieces
1c low sodium chicken broth
2c pinapple juice
2t ground ginger
2t garlic powder
4T unpacked brown sugar
2T low sodium soy sauce
4c crushed pineapple
4T cornstarch
4T water
Directions
Cut onion into large bite size pieces. Add onion, baby corn, bamboo chutes, snow peas and chicken into crock pot.
In seperate bowl mix water, chicken broth, pineapple juice, ginger, garlic powder, brown sugar and soy sauce together. Pour over vegetables.
Cook in slow cooker for 4-6 hours on low or 1-2 hour on high.
Mix cornstarch and water together very well. Mix into crock pot and allow to cook for 20 more minutes.
Serve over brown rice or fried vegetable rice. Rice options are not included in calories count.
