Introduction

Hearty soup. and very filling. Hearty soup. and very filling.
Number of Servings: 6

Ingredients

    1 can diced tomatoes
    1 can kidney beans
    1 box chicken or veggie low sodium broth
    1 onion dices
    1 tsp olive oil
    2 carrots sliced
    2 celery sliced
    1 broccali seperated into small pieces
    1 zuccini cut into small pieces
    pepper, oregano to taste about 1 tsp
    10 sprigs parsley

Directions

In pot use 1 tsp olive oil and soften onions. Add rest of vegetables and saute for a few minutes until a little soft. Add kidney beans, broth and dices tomatoes. Season with spices. Cook until vegetables are soft and flavours have blended -about 1 hour. Add parsley at end.
This can be done in crockpot, but saute onions and vegetables in frying pan and add to liquid mixture in crockpot. Cook on high for 6 hours.
