Ingredients

1 large pork tenderloin (about 16 oz/ 1pound) cut into 1/2 inch strips
    6 tbsp Asian chili-garlic sauce
    2 tbsp canola oil
8 oz (1 c) shiitake mushrooms stemmed and sliced thin
    1 tbsp grated fresh ginger
1 (14 oz) bag coleslaw mix

Pat pork dry with paper towels and toss with 1 tbsp chili-garlic sauce. Heat 1 tbsp oil in large nonstick sillet over medium high heat until just smoking. Cook pork until no longer pink (3-5 minutes). Transfer to plate.

Add mushrooms and remaining oil in empty skillet and cook over medium high heat until lightly browned (5 minutes). Stir in ginger and cook until fragrant (30 seconds). Add coleslaw mix and cook until wilted (3 minutes). Stir in pork and accumulated juices, remaining chili-garlic sauce, sherry, and cook until slightly thickened (1 minute). Sprinkle with scallions.
