Ingredients

    2 tbsp crumbled bacon bits
    3/4 cup (5 oz) chopped onion
    3/4 cup (5 oz) chopped celery
    1 sprig fresh thyme, stripped of stem
    1 bay leaf
    1 can Swanson's 99% fat free chicken broth
    6 small new red potatoes (24 oz)
    2 cups skim milk
    12 oz diced smoked chicken breast (skin removed)
    1 can (12 oz) fat free evaporated milk
    1 red pepper, diced
    1 tsp. chopped resh dill
    1/2 tsp smoked paprika

Directions

Put bacon bits in pan and heat over low heat. Add onion, celery, thyme and bay leaf. Turn heat up to medium and cook until vegetables are soft, about 10 minutes.

Dice potatoes and add to pot, with broth. Simmer until potatoes are just tender, about 10 minutes.

Add milk, peppers, chicken, paprika and dill. Cook until the chicken is just cooked through. Remove bay leaf, adjust seasonings (salt & peppers) to taste.
