Introduction

Ingredients

    2 cups spring water
    1 stamp-size piece of kombu (sea vegetable)
    1/4 cup onion cut into thin half moons (pg. 132 - Mayumi"s Kitchen)
    1/4 cup daikon, cut into thin wedges
    2 1/2 tsp barley miso, diluted in 2 Tblsp spring water
    2 tsp sliced scallions (spring onions) for garnish

Directions

1. Place the water and kombu in a pot over medium high heat and bring to a boil. Turn heat down to medium, add the onion and simmer for 2 to 3 minutes, then add the daikon and simmer for 2 to 3 more minutes.

2. Turn heat to medium low, add the miso, and simmer for 2 to 3 more minutes. Discard the kombu or slice in thin strips and return to the soup if desired.

3. Transfer to individual serving bowls and garnish with the scallions.
