Ingredients

1 cup oats
1 cup nonfat milk
1 cup whole wheat pastry flour
1 tsp cinnamon
1 tsp ground cloves
1/4 tsp nutmeg
1/4 tsp cloves
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tbsp flax seed meal
1 large egg, beaten
1/2 cup canned pumpkin
1/3 cup packed brown sugar
2 tbsp canola oil
Directions
Bring milk to a simmer and mix with oats. Let sit for 10 minutes.
Meanwhile, sift flour, spices, baking soda, baking powder and salt together. Stir in flax seed. Grease a 12-cup muffin tin.
Mix egg, pumpkin and sugar into softened oatmeal. Mix gently with flour until just combined. Spoon into muffin tin.
Bake in a preheated 400 degree oven for 18-20 minutes until set and lightly browned.
