Ingredients

1-lb. tuna steak
2-3 tablespoons olive oil
Juice of 1 lemon
3-inch piece lemon peel
4 cloves garlic, crushed and peeled
2 tablespoons fresh cilantro, chopped
1-inch piece fresh ginger, grated
1 to 2 tablespoons tamari sauce
water
Directions
Place tuna in glass or ceramic bowl. Combine oil, lemon juice, lemon peel, garlic, cilantro, ginger, and tamari and pour over fish. Allow to marinate 2 hours, turning a couple of times.
Heat a heavy cast-iron skillet over medium heat. Put tuna in the skillet. Add marinade and a tablespoon or two of water and bring to a simmer. Cover and steam 8 to 10 minutes. Watch carefully; cooking time will vary according to the thickness of the fish and your preference. Add additional water 1 tablespoon at time, if necessary.
