Introduction

These are great for breakfast or a healthy after school snack! These are great for breakfast or a healthy after school snack!
Number of Servings: 12

Ingredients

    1.75 C unsweetened applesauce
    1/2 C Stevia extract in the raw
    1/2 C brown sugar
    2 eggs
    1 C oats
    1/2 tsp baking soda
    1 1/2 C whole wheat flour
    1/4 tsp salt
    2 tsp vanilla extract
    2 medium apples (cored and chopped with skin on)
    1 C unsweetened raisins

Directions

Add all ingredients to mixer and mix until well blended. Spoon into muffin cups (I use silicone bake muffin tins). Bake at 350* for 25-30 min.

Serving Size: makes 12 large muffins
