Ingredients

    1 TB olive oil
    2.5 lb. ground turkey breast
    2 garlic cloves, minced
    32 oz. reduced sodium broth
    30 oz. canned white beans, drained and rinsed
    1 tsp. ground cumin
    1 tsp. dried oregano
    1 tsp. chili powder-- chipotle variety if you have it-- adds a lot.
    lime juice from one lime.
    fresh cilantro

Directions

Cook turkey, onion, and garlic in the olive oil over medium high heat until turkey is browned, about 10 minutes.

Add the beans, seasonings, and broth, and simmer, covered, for about 30 minutes.

Add cilantro just before serving.

Makes 8 servings.

    I make this all the time, and really like it. It's one of my favorite "go-to" easy recipes. I usually throw a can of mild chopped chilies in as well, cut down a bit on the broth and puree some of the beans to thicken it. - 3/8/15

    Very tasty! I added a can of Rotel Tomatos and a Tobasco pepper from the garden. I also thickened it up with a little cornstarch. - 8/20/10
