Ingredients

    2 T. veg. oil
    1/4 cup onion, chopped
    1 1/2 boneless skinless chicken, cut into 1/4 inch pieces
    2 tsp. ground cumin
    2 tsp. ground ginger
    2 tsp. curry powder
    1/4 tsp. salt
    1/4 tsp. red pepper flakes
    14 oz can diced tomatoes
    1/2 cup coconut milk

Directions

Heat oil in skillet. Add onion, cook until tender. Toss chicken with spices. Add to skillet, cook until done. Add tomatoes and coconut milk. Simmer 20 minutes.
Spoon curry over steamed rice.
