Ingredients

    6 cups day old cooked brown rice
    4 cups cooked black beans
    1 cup finely chopped raw onion
    1 cup chopped fresh bell or sweet red peppers
    1/4 cup fresh cilantro, chopped
    1 tbsp canola oil
    1/4 cup Worcestershire sauce
    salt and pepper

Directions

Saute pepper and onion in oil on medium heat. Add beans and cook 2 minutes longer. Add rice and mix, cook 3 minutes more. Add Worcestershire sauce, cilantro Mix well. Makes 8servings, about 1 and 1/4 cup each. Garnish with favorite salsa.
