Introduction

Ingredients

    15 oz. can black beans, rinsed and drained
    can diced tomatoes w/ green chilis, undrained
    1 c. uncooked pearl barley
    2 c. chicken broth
    3/4 c. frozen corn
    1 bunch chopped green onions
    juice from 1 lime
    1 tsp. cumin
    1 tsp. chili powder
    1/2 tsp. ground red pepper
    1 garlic clove, minced

    serve w/ tortillas, fresh cilantro, fat free sour cream, avocado, etc., as desired. (not included in nutritional information).

Directions

Place ingredients (beans through garlic) in 3 to 4 quart electric slow cooker and stir well. Cover w/ lid & cook on low 4-5 hours or until barley is tender.

Stir in cilantro.

Spoon about 1/3 c. of barley mix onto each of 2 corn tortillas for a serving. (Each serving is about 2/3 of a cup of "filling" for tortillas of your choice).

Makes 8 servings.
