Introduction

This is just something I threw together the other day and it came out really well so I thought I'd share :) This is just something I threw together the other day and it came out really well so I thought I'd share :)
Number of Servings: 1

Ingredients

    Lundberg Roasted Brown Rice Couscous
    Black Beans
    A Handful of Spinach
    1/4 of a Yellow Pepper
    5 Cherry Tomatoes
    3 Scallions
    1 Tbsp Oil
    Garlic Powder
    Rosemary
    Onion Powder
    Spanish Paprika
    Salt & Pepper

Directions

1. Follow the directions on the box to make the couscous. {I sprinkled a little bit of garlic powder in the water as it started to boil}
2. While the couscous is cooking {which takes about 15 minutes or so}, chop up the scallions, yellow pepper, and tomatoes.
3. Saute the Vegetables in the oil, adding the spices for flavor.
4. Prepare the Spinach
5. Mix it all together in a bowl and enjoy!
