Ingredients

2 chicken breast fillets, diced (no skin)
1 T. olive oil
1 large onion, diced or sliced
3 cloves garlic, chopped
ginger to taste
1 t. comino powder
1/2 t. tumeric
1/2 t. cumin seeds
1 t. curry powder, or more, to taste
1 t. paprika
1/2 c. chopped tomatoes
2 jalapenos
salt to taste
chopped cilantro (optional)
juice of half lime (optional)
Directions
1. Carmelize onions by sauteeing for 30 minutes in oil.
2. Add garlic and ginger and cook for 1 minute.
3. Add comino powder, tumeric, cumin seed, curry and paprika. Sitr
4.Add tomatoes, jalapenos and cilantro, if desired.
5. Simmer 15 minutes
6. Add chicken and cook until done. Add water if necessary
7. Salt as desired
