3/4 cup quick cooking oats
1/2 cup griund flax seed
1 1/2 cups Whole Wheat flour
1/2 cup sugar substitute (Splenda for baking)
1/2 teaspoon salt
1 tablespoon baking powder
3/4 cup fat free sour cream
3/4 cup unsweetened applesauce
2 large Egg Whites
1 cup mixed berries
1 teaspoon ground cinnamon

1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups.
2. In a large bowl, mix the 3/4 cup oats, flax seed, flour, sugar substitute, salt, cinnamon and baking powder. Stir in the sour cream, applesauce, and egg whites just until dry ingredients are evenly moist. Fold in the berries. Scoop batter into the prepared muffin cups.
3. Bake 20 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.
