Ingredients

Chicken Breast, no skin, 65 grams, diced
1/4 cup fresh red bell peppers, chopped
    1/4 cup chopped fresh spinach
Red Ripe Tomatoes, 0.5 slice, medium (1/4" thick), diced
1/4 cup Acme Mexican Style Taco Blend Cheese
    2 Mission Multi-Grain Flour Tortillas

Directions

Chop the ingredients and spread evenly on bottom tortilla. Place second tortilla on top. Spray a skillet with non-stick cooking spray and add quesadilla. Cover and let heat a couple minutes, then flip and re-cover for another couple minutes. You can double-check to see if it's done by gently lifting the top tortilla to see if the cheese has melted. If it has, then plate and enjoy! :-)
