Ingredients

    2-3 slices bacon
    8 tablespoons olive oil
    3 shallots, Thinly sliced
    1 large head of radicchio coarsley chopped
    1(15 oz.) can cannellini beans , drained
    1/3 cup fish or chicken broth
    salt & fresh ground pepper
    6 ( 5 oz) whitefish fillets, such as talapia
    flour for dredging
    Lemon vinaigrette follows:
    1/4 cup fresh lemon juice
    1/4 cup lightly packed fresh italian parsley
    2--3 cloves of garlic
    2 tsp. lemon zest
    1/2 tsp. salt
    1/4 tsp black pepper
    1/3 cup extra virgin olive oil

Directions

Heat oil in a large skillet add bacon, shallots and saute until tender, about 2 minutes. Add the radicchio and saute until wilted about 5 minutes. Add beans and broth and cook until heated through, about 5 minutes, season to taste with salt & pepper. Heat 3 TBsp. of oil sprinkle fillets with salt & pepper. Dredge in flour, cook in pan until golden brown, spoon radicchio mixture on the plate top with fillets drizzle the vinaigrette over the top.
Lemon Vinaigrette- Blend the lemon juice, parsley, garlic, lemon zest, salt & pepper in a blender. With the machine running gradually blend in the oil. Season to taste with salt & pepper.
