Introduction

I used fresh cherries and milk chocolate chips, but the basic recipe can accommodate whatever fruit you like and the chocolate isn't necessary... but does make a nice treat! These muffins are fairly heavy and dense, not like store-bought cakey muffins at all. Ingredients

    1/3 cup butter, melted
    1 cup milk
    1 egg

    2 cups multigrain flour
    2 tsp baking powder
    1/4 cup brown sugar, packed

    1 cup cherries, pitted and chopped
    3/4 cup milk chocolate chips
    1 1/2 cups Fibre 1 Crunchy Original cereal

    2 tbsp brown sugar (for sprinkling on muffins prior to baking)

Directions

Combine melted butter, milk and egg.

In seperate bowl, combine flour, baking powder and sugar. Add milk mixture, stir until just combined, mixture will still be lumpy.

Stir in chocolate chips, cherries and cereal.

Divide evenly between 12 paper-lined muffin cups. Sprinkle with brown sugar. Bake in 325 degree F oven for about 20 minutes or until toothpick inserted into centre muffin comes out clean.
