Ingredients

    1/2 Cup Extra Light Olive Oil
    2 Tbs Lemon Juice
    1 teas Italian Seasoning
    3/4 teas Salt
    1/2 teas Black Pepper
    1/2 teas Parsley flakes
    1 Large Cucumber, Peeled, and chopped (I left the seeds in because they were small.)
    5 Roma tomatoes, chopped
    1/4 Cup Red Onion, diced
    1 (15.5 oz) can Great Northern beans rinsed and drained
    1 (12 oz) can Solid White Tuna, drained well

Directions

In a large bowl, whisk together first six ingredients.

Stir in Cucumber, Tomatoes, Onion, and beans, add tuna and toss gently until evenly coated.

Serve immediately, or refrigerate until ready to serve.

Serving Size: Makes 6 1-Cup servings
