Ingredients
-
2 large bell peppers (red is sweetest!)
1/2 lb. 93% lean ground beef
1/2 c. chopped onion
1.5 servings of brown rice (3/4 cup dry)
1/2 c. Bertolli Arrabbiata tomato sauce
1 slice pepper jack cheese
1 tsp. chili powder

pepper
Directions
Slice peppers in half (either way), and remove ribs and seeds. Place in a glass baking dish, sprayed with cooking spray, and bake at 350 for 15 minutes.
While peppers are cooking, prepare brown rice as directed on package. Cook ground beef in a shallow skillet, seasoning with as much spiciness as you like. Mix cooked rice, beef, chopped onion, tomato sauce, and crumbled cheese in a medium mixing bowl.
