Ingredients

1 can of Chickpeas (Garbanzo beans)
1 tbsp Olive Oil
Juice of 1 whole Indian Lemon (or small Lime, or 1/2 avg. Lemon)
1/2 tsp Sambal Olek (chili garlic paste)
1 tsp Garam Masala (or your choice of seasonings)
Pinch of Sea Salt
Directions
Preheat oven to 400 degrees F.
Open can of chickpeas, drain in colander and rinse thoroughly with cold water.
Place paper towel in a baking dish (with edges), pour chickpeas onto paper towel, top with another paper towel and blot until dry. (Remove paper towels).
In a small, liquid-tight container, mix olive oil, lemon/lime juice, and sambal olek. Shake well.
Pour sauce over chickpeas, and toss well to cover. Sprinkle garam masala (or your choice of seasonings) over sauced chickpeas, and coat well. Note: sauce will be consistency of vinaigrette, and will lightly coat chickpeas at first, but will thicken when you add the seasonings.
Shake the dish until chickpeas settle into an even layer. Bake at 400 degrees F for 30-45 minutes until toasted and crispy (not soft). Stir/shake pan every 10 minutes to ensure even cooking.
Once golden brown and crispy, sprinkle with a pinch of sea salt, and let cool. Enjoy!
