Ingredients

    Romaine Lettuce (salad), 4 cup
    Spinach, fresh, 4 cup
    Apples, fresh, 2 cup, quartered or chopped
    Lemon Juice 4 Tbl
    Water 2 cups
    Walnuts, 2 oz (14 halves)
    Pomegranates, 1 pomegranate (3-3/8" dia)
    Pom Wonderful Pomegranate Juice, 8 oz

Directions

In a large bowl place 4 cups of romaine lettuce and 4 cups of fress spinach. You may want to do a rouch chop on the lettuce and spinach leaves to make them smaller and easier to eat, but not necessary. Chop red and green apples into small pieces or julienned strips. Place apples into water and lemon juice mixture to keep fresh. Place walnuts into a warm pan and roast for 2 minutes then set aside to cool. Place Pomegranate Juice into a sauce pan and reduce down into a dressing consistency and then let cool. (If you do not have time to wait for the juice to reduce add cornstarch and a little honey and bring to a boil.) Take the seeds out of the pomegranate and set aside. Take apples out of the water and add to the salad, add the walnuts and pomegranates and toss with the pomegranate dressing. Makes 10 servings.

    Very Good
    Made this salad for Thanksgiving. I initially burned the dressing while waiting for it to cook down. I ended up having to improvise adding cranberry juice and rice vinegar to the pomegranate juice I had left. It turned out great. I think it needs the added zing of the vinegar. - 11/29/10
