Ingredients

4 cups flour
3 cups sugar
2 tsp baking soda
1-1/2 tsp salt
1 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1/2 tsp ground cloves
15 oz can pumpkin
2/3 cup cold water
1 cup oil (I use Smart Balance Omega)
4 eggs
8 - 10 oz chocolate chips
Directions
In a VERY large bowl stir together dry ingredients (flour - cloves).
In a large bowl mix pumpkin, water and oil. Add eggs, one a time, beating well after each addition. Add (carefully) to flour mixture, blending thoroughly. Stir in chips. Pour into three greased and floured (small) loaf pans (or two large loaf pans or one very large bundt pan)
Bake about one hour or until pick in center comes out clean. Larger pans may need extra baking time. 36 servings is based upon 3 small loaf pans. These freeze very well; also work extremely well in mini pans to be given as gifts! Sprinkle a little confectioner's sugar on top for a pretty look. I have been making this cake for 26 years - it is a hit every time!
