Introduction

I made this up based on ingredients I had and could find, and on the spinach berry salad. I made this up based on ingredients I had and could find, and on the spinach berry salad.
Number of Servings: 4

Ingredients

    1 bag (300 g) of fresh spinach
    100 g dried cranberries
    About 1/4 cup chopped walnuts
    1/8 cup balsamic vinegar
    1/8 cup olive oil
    1.5 tbsp honey
    1/4 tsp thyme
    1/4 tsp basil

Directions

Clean and dry the spinach. Put spinach into a large bowl. Add dried cranberries. Mix with hands (or by shaking with a second bowl over top). Chop the walnuts and add to spinach and cranberries.

In a separate bowl, mix olive oil, balsamic vinegar, honey, thyme and basil. I usually whisk it together. When finished, pour over spinach mixture.

Serving Size: makes about 4 large servings
