Ingredients

    2 tablespoons of active dry yeast
    1-3/4 cups of warm water
    1 large egg
    1 large egg white
    1/4 cup plus 2 tablespoons of granulated sugar
    2 tablespoons of Spenda no calorie sweetener
    2 tablespoons of unsweetened applesauce
    2 tablespoons of butter (salted)
    1 teaspoon of salt
    6 cups of whole wheat flour

Directions

In a mixing bowl, dissolve yeast in water. Add egg, egg white, sugar, splenda, butter, applesauce, salt, and 3 cups of flour; beat until smooth. Add enough remaining flour to form a soft dough. Turn onto a floured surface and knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and refrigerate for 2 hours or up to 2 days. Punch dough down and divide in half; shape each portion into 12 rolls. Place in two greased 9-in. round baking pans. Cover and let rise in a warm place until nearly doubled, about 30 minutes. Bake at 350 degrees for 20 minutes or until golden brown. Yields 24 rolls.
