Introduction

Low-fat veggie soup. Delicious and very filling!

Number of Servings: 10

Ingredients

    - 6 carrots sliced
    - 4 celery stalks chopped
    - 1 red pepper sliced
    - 2 smalls bundles of frozen spinach (about 1/2 cup)
    - 1 large handful of green beans cut into bite sized pieces
    - 1 box of vegetable broth (900mL)
    - 1 can of mixed beans or beans of choice
    - 2 cans of whole stewed tomatoes
    - 1 red onion
    - Knorr Cream of Asparagus soup mix (73g)
    - cayenne pepper to taste

Directions

Cut all vegetables into desired sized chunks and add to pot with vegetable broth, beans, soup mix and canned tomatoes. Bring to a boil and then simmer on low heat until vegetables reach desired consistency (about an hour).

Optional - can add sliced portobello mushrooms or baby bellas for added "meatiness".
