Introduction

Number of Servings: 25

Ingredients

    1 Can pumpkin (15 oz)
    1 box French vanilla instant pudding (3.4 oz)
    1/4 cup brown sugar
    1 teaspoon cinnamon
    1/2 teaspoon ginger
    dash nutmeg and cloves
    1 - 8oz tub cool whip lite

Directions

Mix together:
1 can pumpkin,
1 box French vanilla instant pudding,
1/4 cup brown sugar
1 t cinnamon
1/2 t ginger
dash each of nutmeg and cloves.

Once blended, fold in 1 oz tub lite cool whip,
Chill several hours or overnight
Serve with cinnamon graham cracker sticks or nilla wafers.

This fit tightly in a ziploc 32oz container.
I figured a serving to be 2 heaping tablespoons.

    I made Ice cream sandwiches with this by putting a large dollop onto a graham cracker and then gently placing another cracker on top. Then I put them in the freezer. Superb. - 2/10/10

    This is so good, and healthy too. I used Splenda brown sugar blend, lite cool whip, and used only half the amount of sweetener; just added a little more spice. This tastes great on graham crackers. - 1/5/09

    I make something similar with my preschoolers but we use the light cool whip, a can of the pumpkin pie mix and combine those two together and eat it with graham cracker sticks for dipping. - 1/19/09
