Ingredients

    2 pounds baby carrots, cooked & mashed
    1/2 Cup melted butter
    1 Cup Sugar (can use Splenda instead)
    3 Tablespoons Flour
    1 Tablespoon Baking Powder
    1 Teaspoon Vanilla
    1/2 Teaspoon Cinnamon
    1/4 Teaspoon Nutmeg
    3 Eggs, Beaten (can use Egg Beaters)

Directions

Preheat oven 350 degrees

Mix well. Put in 2 quart casserole. Sprinkle with 1 teaspoon powdered sugar. Bake 1 hour.
