Ingredients

    8 oz light cream cheese
    1 1/2 cups margarine (3 sticks)
    1 1/2 cups sugar
    2 large eggs
    zest from one lemon (1 TBS)
    juice from one lemon (2 -3 TBS)
    4 1/2 cups flour
    2 tsp baking powder
    1 cup of your favorite jam or whatever is on hand

Directions

Cream together the cream cheese and margarine. Add sugar and beat until light and fluffy. Add eggs and mix. Add lemon zest and juice and mix well. Then add baking powder and flour and mix til incorporated well. Chill a couple of hours. Make small balls and flatten slightly on UNgreased cookie sheets. Make an indentation with your thumb or finger, and put a bit of jam in that space. Bake at 350 for about 15 minutes.
Serving Size: Makes about 80 cookies.
